This is a beast of a knife. I've used it to trim spare ribs for several years and this year I cut a ham bone in half. This is still out of the box sharp. The only downside to this knife is it will cleave a cutting board just as easy as a ham bone. Feed it cheap plastic boards, and not your high valu
